Risotto with Porcini Mushrooms
Authentic Italian recipe

Ingredients/serves 3
extra virgin olive oil; butter; 1/4 cup of white dry wine;
approximately 3 cups vegetable broth; salt; parmesan;

Heat a tablespoon of extra virgin olive oil or butter in a 4 quart saucepan.
Pour the package contents into the pan and sauté lightly. Add ¼ cup of white wine and bring to boil until reduced.

Add approximately 3 cups beef or vegetable broth a little at a time stirring constantly 15-17 minutes until rice is tender and creamy.
Season to taste with salt, butter whipping cream and parmesan cheese.
